PEACHES

Peaches (Prunus persica) are the edible, juicy & fuzzy fruits that grow from a deciduous tree. These stone fruits are notoriously tough to grow organically on the North Fork as we’re up against fungal diseases, pest pressures and weather stress. When our Yellow Peaches are out for sale, consider it a rarity and buy ‘em up!

In season: July to August

Nutritional value: Peaches contain vitamin C — 15% your DV — as well as vitamins A, E and K. They also have niacin, folate, iron, choline, potassium, magnesium, phosphorus, manganese, zinc and copper!

Storage tips: Store unripe Peaches on the counter — they may be hard when you purchase them, but they’ll ripen after two-three days! Once ripe, move to your refrigerator or slice and freeze!

Culinary uses: Peaches are versatile! Enjoy them fresh, add them to smoothies, bake them into desserts, make jam, or go the savory route and add to hot sauce or salsas!
