In this hands-on class we’ll learn the step-by-step process of making oils and transforming them into rich, protective salves and balms — perfect for the dry, cold months ahead. We’ll explore herbs like Calendula, Comfrey, and St. John’s Wort, and discuss how to choose the right base oils and waxes for your needs.
Participants will leave with a detailed handout covering all topics discussed in class, a bottle of herbal oil, a customizable recipe to make your own herbal salve at home!
Winter Immunity: Kitchen Herbalism for Seasonal Wellness

As the days grow shorter and the air turns crisp, our bodies call for deeper nourishment and warmth. Join herbalist Kayla Barthelme and explore the art of winter wellness through kitchen herbalism — simple, everyday remedies that can be stirred, steeped, or simmered into your meals.
In this hands-on class, we’ll learn to work with locally abundant herbs and immune allies like garlic, ginger, thyme, and elderberry to strengthen your system and stay grounded through the darker months. months. Think of it as your pre-holiday immunity tune-up. Together we will taste and talk about tonics, teas, and broths that support vitality and resilience, honoring both body and bioregion.
Participants will leave with a detailed handout covering all topics discussed in class, including recipes to make at home! In addition, participants will make an immune boosting herbal tonic in class, and a customizable recipe to make your own herbal tonic at home!
Meet the Instructor
Kayla Barthelme is an herbalist, farmer, and avid plant lover with a BS in Conservation Biology from the SUNY College of Environmental Science and Forestry.
Her love of nature and ecology has taken her all over the world to further her relationship with plants and study their role in different communities.
She has studied ethnobotany with Dr. Robin Wall Kimmerer and received her Permaculture Design Certificate in Oregon. She has also completed the Vitalist Herbal Practitioner Program through the School of Evolutionary Herbalism.
She is the founder of Soul Creations, where she grows her own medicinal herbs and flowers on a serene piece of farmland in Mattituck on the North Fork of Long Island. Utilizing regenerative, organic practices to grow high-quality and potent medicinal herbs, Kayla continues to serve the local community — both plant and human!
