BROCCOLI
Broccoli (Brassica oleraracea) is a cruciferous vegetable in the mustard family, within the genus Brassica. Broccoli is a relatively fast-growing annual thanks to its large, leathery leaves which bear beautiful heads, or florets, at their center. Succession planting allows us to enjoy Broccoli into early winter!
In season: Early September through December
Nutritional value: Broccoli contains Vitamin C (1 cup raw is 91% your DV!), Vitamin K, Folate, Potassium, Manganese and Iron. Broccoli is also a great source of fiber and is rich in a number of antioxidants.
Storage tips: Broccoli stores best in the crisper drawer in your fridge. If opting to put in a plastic bag, keep the bag open to prevent moisture buildup. Broccoli freezes great as well — wash, dry, cut into desired size, freeze on a baking sheet, then transfer to a container or bag so you can enjoy as needed throughout the year!
Culinary uses: Broccoli retains its flavor best when lightly steamed or tossed into a stir-fry! It’s also great in soups, salads or simply eaten raw for snacking purposes! Don’t toss the stalk — it’s nutritional value is equivalent to the crowns! We love chopping them and adding to a stir-fry or sheet pan roast, and they work great in soups too!
