POTATOES
Potatoes (Solanum tuberosum) are a member of the nightshade family, grown for its starchy tubers. These humble spuds have been cultivated commercially on Long Island since the 1800s — at the spud-growing peak of the 1940s, nearly 40,000 acres were dedicated to growing them! Here at Sang Lee, we grow Red, Purple, Gold, and Fingerling Potatoes!
In season: Mid-July through the Winter
Nutritional value: Our Potatoes are high in vitamins C and B6, as well as potassium, manganese and folate. Potatoes also have a decent amount of fiber and iron (keep the skin on — that’s where the iron and potassium lie)!
Storage tips: The best way to store our Potatoes is in a cool, dark, and dry place — think in a storage bin in the garage or basement, the back of a kitchen cabinet, or in a paper bag on the counter! Freezing raw potatoes is sadly a no-go, but freezing cooked potatoes is another long-term storage option.
Culinary uses: What can’t you do with a Potato? Potatoes can be baked, steamed, fried, pureed, mashed, stuffed, roasted, grilled and boiled!
