SUGAR SNAP PEAS
Sugar Snap Peas (Pisum sativum var. macrocarpon ser. cv) are edible-pod peas with rounded pods and thick pod walls. In French they are called mangetout, which can be translated to “eat it all” — meaning the entire pod can be eaten, no need to de-shell or de-string these sweet peas! We grow our Sugar Snap Peas in both our greenhouses (allowing for an earlier harvest) and field to ensure we have a bounty!
In season: Late May to Early July
Nutritional value: Sugar Snap Peas contain folate, iron, potassium, manganese, and vitamins A, C, and K (1/2 cup is 100% your Daily Value of Vitamin C)! Due to their high phytonutrient content, they help to stabilize blood sugar, reduce inflammation and support overall immune health.
Storage tips: Sugar Snap Peas store best in the fridge — store whole snap peas in a bag or container in the crisper draw of your fridge for up to two weeks!
Culinary uses: Enjoy them raw, sauteed or stir-fried. They make a a great vehicle for dip (try them with our best-selling Ginger Scallion Dip), can be tossed into salads, or even quickly cooked with some garlic. They pair great with other Spring veggie favorites like Asparagus, Radishes, and Scallions!
