CHINESE LONG BEANS
Chinese Long Beans (Vigna unguiculata subsp. sesquipedalis) are also called Asparagus or Yardlong Beans (despite only being about half a yard long)! They are cultivated for their edible pods and are used just like your common String or Green Beans. Despite loving hot and humid Summers, Long Beans plants take longer to mature than bushing varieties!
In season: August to October
Nutritional value: Chinese Long Beans are one of the richest sources of folate — half a cup gives you around 15% your DV! They are also high in vitamin C, A, as well as minerals such as minerals such as iron, copper, manganese, calcium, and magnesium.
Storage tips: Store Chinese Long Beans in an airtight container in your refrigerator for up to 7 days. Note that if they soften, simply soak them in cold water and they will firm right up! Alternatively, you can blanch and freeze them, freeze, or pickle them!
Culinary uses: Enjoy them raw, sauteed or stir-fried. They make a a great vehicle for dip (try them with our best-selling Ginger Scallion Dip), can be tossed into salads, braised, grilled, roasted… let your imagination run wild!
