CUCUMBERS
Cucumbers (Cucumis sativus) are a member of the gourd family and are cultivated for their crisp edible fruits. The cucumber plant is a tender annual with a rough, succulent, trailing stem. We start Cucumbers in our hot houses by trellising them with twine in early Spring to get the ball rolling on harvesting! We grow them in the field as well, though the field varieties tend to have slightly thicker skin. Check out our Cucumber infographic below to see the varieties we cultivate!
In season: Early June to August
Nutritional value: Cucumbers are a great source of vitamins A and K. Their high water content also makes them an ultra-hydrating vegetable to help you survive those humid North Fork summer days!
Storage tips: Cucumbers are temperature sensitive, making the crisper drawer of your refrigerator the best place to store them! If your crisper drawer runs cold, be sure to wrap the cukes in a dish towel.
Culinary uses: Whether it’s eating them raw in a salad, dunking them in your favorite dip, pickling or fermenting, you have loads of options! Our favorite way to use them is in a smashed Cucumber salad, or as an addition to our Gazpatcho!
