ASPARAGUS

Asparagus (Asparagus officinalis) is an herbaceous perennial that produces edible shoots or spears. Also known as Garden Asparagus, these succulent spring stalks are generally harvested during a 8-10 week period, making them extra special! We provide our Asparagus with a hefty layer of compost in March or April to encourage production.

In season: Late April to Early June

Nutritional value: Asparagus contains Vitamin A, C, and E. It is also a great source of antioxidants – our Purple Asparagus’ pigmentation is due to the antioxidant anthocyanin, which combats free radicals in the body.

Storage tips: Asparagus stores best in the fridge — try trimming the bottoms and standing the spears up in a glass or jar with about an inch of water. Cover with a bag or tea towel, then refrigerate them for several days. Change the water as it gets cloudy to keep the Asparagus fresh. If you just can't spare room in the fridge, simply wrap the asparagus in a damp towel and toss in the crisper drawer!

Culinary uses: Roast, steam, sauté, grill! Asparagus is versatile in it’s preparation options, making it a great addition to any meal. Asparagus retains its flavor best when lightly steamed or tossed into a stir-fry! It’s also great to make soup with, in salads or simply eaten raw for snacking purposes (it pairs great with our Hummus)! No matter your preparation method, simply chop the tough bottoms of the stalks (this could be anywhere from 1/4 inch - 1 inch, depending on the stalk) and prepare as you wish!
